Red Beans and Rice . . . another comfort food dish!

Comfort food. . .

Comfort food. . . the foods that make you feel warm on the inside. . . foods that take you back to your childhood. . . foods that we generally associate (at least I do) with cooler or colder weather–like Red Beans and Rice!

“Red Beans and Rice”. .  one of our family favorites!

When my children were small, I found this recipe for “Red Beans and Rice” in a “Louisiana Entertains” cookbook. I don’t recall where I got the cookbook, but I have had it for more years than I care to remember. It is full of wonderful Louisiana menus and recipes. Any I have made have been delicious:)

I made these Red Beans and Rice quite a lot when my children were growing up,  and I continue to make it now. It is a favorite of our, the best recipe for this dish we have found!

Making Red Beans and Rice . . .

Red Beans and Rice is one of the easiest meals you can make, especially if you make it with canned red beans. Of course, you can use the dried red beans, and soak them overnight before you plan to make it.  Essentially, it takes one pot, one skillet, plus rice.

Step 1:

The first step in making Red Beans and Rice, is to lightly brown the sliced smoked sausage in a skillet. Be careful to not use too high heat because it’s easy to burn the slices. Once they are browned, drain on paper towels.

Step 2:

Next, place all the ingredients into the large pot. Bring to a boil, then simmer about 1 hour. Then the cooked smoked sausage is added to the pot with the other ingredients. You can add the ham chunks if you have them. If not, the smoked sausage adds enough flavor.

Step 3: Finish the Red Beans and boil the Rice . . .

The final step in making Red Beans and Rice is to boil the rice while the Red Beans continue to simmer. And, prepare your green salad and whatever bread you are going to serve with it. This is a “sure-to-please” meal!

Final thoughts on Red Beans and Rice . . .

You will find that this Red Beans and Rice dish is delicious and filling . . . just the right amount of “hot”. I always served it with a green salad and hot French bread as a complete meal. . . a “comfort food” kind of meal. (Or, you might want to serve this dish with jalapeno cornbread, like a favorite restaurant here in the south!).  However you choose to make it, if you like Cajun-type food, you will like this! And, this is a perfect meal to serve in the fall or winter, or just about any time!

Red Beans and Rice Recipe

I have made this recipe for years.  It is our favorite Red Beans and Rice recipe. 

 Ingredients:

  • 1 pound smoked turkey sausage
  • 4 (14 ½-ounce) cans red kidney beans, drained
  • 1 ½ cups cut-up ham chunks (turkey ham, if you can find it)
  • 2 cups chopped red onion
  • 2 teaspoons minced garlic
  • 2 cups chopped celery
  • 1 teaspoon black pepper
  • 1 tablespoon salt
  • 1 teaspoon cayenne pepper
  •  Hot cooked rice—cooked according to package directions for the number of servings you need.

Instructions:

  1. Slice turkey smoked sausage into 1/4-inch slices.
  2. Brown on both sides in a skillet on medium to medium low heat. Remove from the skillet and drain on paper towels. Set aside.
  3. Place all ingredients—except smoked sausage—in a large pot.
  4. Cover with water and cook about 1 ½ hours, checking to add more water if needed.
  5. Add smoked sausage to the beans the last 30 minutes of cooking time.
  6. Serve over hot rice.

NOTE: You can make this with kielbasa or turkey smoked sausage. . . I’ve made it both ways and it is equally good. You can also use turkey ham (if you can find it!). I have used that, but recently I haven’t been able to find it.
