Mama’s Strawberry Fruit Bread!

Mama’s Strawberry Fruit Bread is one of Mama’s favorite recipes. So, when I was there last week, she and I made it! I had brought some frozen strawberries that I had from several months back, and needed to use them. What better way than to make a fruit bread?

Making Mama’s Strawberry Fruit Bread . . .

I was a bit surprised to find that Mama’s Strawberry Fruit Bread is one of her more healthy homemade breads. The recipe uses both regular and whole wheat flours, and the texture is somewhat dense. But, it was delicious, especially when slathered with butter and homemade strawberry jam! Oops! That might make it not-so-healthy:)

The recipe, which is in our Family Heritage Cookbook, “To Grandmama’s House We Go: The Next Generation”, is actually called Fruit or Vegetable Bread. It is a versatile recipe that adapts to either your choice of fruit or vegetable. Some suggestions are given in the recipe, but we used the strawberries.

Step 1: Dry Ingredients/ Butter and sugar . . .

The dry ingredients are stirred together first, then the butter and sugar are mixed well with a mixer.

Step 2: Prepare the Strawberries . . .

When you prepare the strawberries, mix a little flour in them. That helps absorb any excess juice and also keeps them from falling toward the bottom of the pan during baking. I used frozen strawberries, but fresh would work just as well. If using frozen, just be sure to keep frozen until you are ready to cut them up and add the bit of flour.

Step 3: Putting the bread together . . .

The remaining ingredients are added, then the batter divided into three small bread pans and baked. (Mama prepared the pans with shortening and flour. You can see a little of that in the picture below.) 

Step 4:  Bake!

The Strawberry Bread is baked until a toothpick inserted near the center comes out clean . . . about 40-45 minutes. Be careful to not overbake. If the bread has pulled away from the sides of the pan, it’s time or close to time to take the bread out of the oven.

The Strawberry Bread baked perfectly! At this point, we left them in the pans for 5-10 minutes.

Once the time was up, we turned the breads out onto wire racks to finish cooling.

Mama wanted to try the bread before I left, so we cut one loaf and ate it with some Strawberry Jam she received for Christmas. Delicious!

I took my bread home, then Randa came over to help me drizzle the glaze on top.

Yum!!! Mission Accomplished! A delicious Strawberry Bread for snacking or breakfast! It was delicious by itself or with butter and jam! Because of the whole wheat flour, the texture was a bit dense, but it was a really good fruit bread, especially with butter and jam!

Mama’s Strawberry Bread Recipe

This is a great recipe to make any time of the year. . . just add whatever fruit or vegetables you have that are in season.


  • 1 cup all-purpose flour
  • ½ cup whole wheat flour
  • 1/3 cup quick-cooking oats (Mama said to be sure to use quick-cooking oats)
  • 1 teaspoon soda
  • ½ cup butter, softened
  • ½ cup sugar
  • 2 eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla
  • 2 teaspoons lemon zest
  • 1 cup strawberries, chopped, lay on paper towels to get excess juice out, then mix with a little flour. (If you use frozen, cut them up frozen, then mix them in a little flour. This helps absorb any juice and also helps the fruit not to sink to the bottom of the pan.)
  • ½ cup pecans, chopped


  1. Combine flours, oats, and soda. Set aside.
  2. In large mixer bowl beat butter on medium speed 30 seconds.
  3. Add sugar and beat until fluffy, scraping sides of bowl often.
  4. Add eggs, milk, vanilla, and lemon peel; beat well.
  5. Stir in strawberries.
  6. Add flour mixture 1/3 at a time, beating on low. Stir in pecans.
  7. Spread batter in an 8”x4”x2” loaf pan and bake at 350 degrees for 55minutes-1 hour, or until wooden toothpick inserted in center comes out clean. (We used 3 small loaf pans. The breads baked about 45-50 minutes.)
  8. Cool 10 minutes. Remove from pan and cool.

NOTE: If you want to glaze your Strawberry Bread, pour 1 cup powdered sugar in a small bowl. Add a couple teaspoons of milk–1 teaspoon at a time. Stir well. Add more or less milk depending on the consistency you want. I would also add 1 teaspoon vanilla.
