Instant Pot Recipes We Are Loving Lately {Plus a new cookbook you’ll want to order!}

I am not a good gift giver. I do not say this with false humility. I am not. Ask Fred. It’s just not in my wheelhouse. I’m too task oriented. However, I am getting better.

Enter the Amazon Wish List.

Have you tried this? It’s great. You can create a wish list throughout the year of things that you would like. They don’t even have to be on Amazon. You can add any item to the list…like a gift card to your favorite spa or restaurant or car detailer…basically anything. Back to gift giving. The Amazon wish list is a game changer. Any time I have to give Fred a gift I just click on his list and voila I have a gift that he will like.

Imagine my surprise when I looked at his list around Christmas and he wanted an Instant Pot. I thought he was messing around. He was not. So, with a roll of my eyes I ordered him an Instant Pot. Mind you, I do the majority of the cooking, but he really thought we would like this. I guess it’s better than other gifts I’ve given him in the past. I guess.

Here are my thoughts on the Instant Pot:

It doesn’t really cook things as fast as it claims. For example, recipes will claim you can have soup ready in 8 minutes. Lies. All lies. The pressure cooker has to heat up for 20 minutes, cook for 8 minutes and then it has to release pressure for 10 more minutes. I don’t call that ready in 8 minutes.

It is a one stop shop meaning you can saute, simmer and then pressure cook in it. That’s really nice.

It’s fine.

Has it changed my life? Nope, but having said that I can see how/why people like it.

In an attempt to be a team player I’ve been trying to use said Instant Pot. Here are some of the recipes we’ve tried and loved lately. Truthfully, there really haven’t been any that we haven’t liked. There’s just a learning curve to using a new kitchen gadget.

Tomato Soup by Thriving Home Blog

Tomato Soup is a great way to get lots of vitamins and veggies all in one bowl. I made this for lunch for the grown ups and we ate on it all week. I even threw in a couple of handfuls of spinach to up the veggie count. It is delicious.

Sour Cream Pork Chops by Savory Nothings

Fred calls this pork chops with gravy. I call it pork chops with sauce. Call it what you will. We all agreed this was a winner. In fact, it got 5 thumbs up and that is very rare.

Shredded Pork by Five Dollar Dinners

This pork is the gift that keeps on giving. You can make street tacos or a pita or a BBQ pizza or sandwiches or just eat it plain with good sides. However you choose to eat it, it is good. And, as an added bonus, you’ll have leftovers.

Teriyaki Chicken by Well Plated

I just cooked this chicken and then served it over a simple fried rice. I also went to our local Japanese restaurant and got their special sauce. My kids would eat their arm if it was covered in that special sauce.

Beef Tips with Mushroom Gravy by Little Spice Jar

When I made this I put it in the Instant Pot and left to pick up a boy at a practice. Fred came in as it was finishing up and I did not leave instructions. They ended up eating before I got home and they ate this like soup instead of in a gravy. It was wonderful. I’ll make the gravy the next time because I’m sure that will be even better.

Chicken Nachos by Thriving Home Blog

Nachos in an Instant Pot? Yes please. I loved everything about this dish. I stopped at our favorite Mexican restaurant for their chips, guacamole and salsa and just piled it all up. We sat around the pan and ate and talked and ate and talked. Does it get much better?

Beef Stew by Thriving Home Blog

Oh beef stew, how I love you. This was cooked perfectly. This Cheesy Jalapeno Cornbread is the perfect side dish.
