Easy Cheesy Chicken Broccoli Rice Casserole . . .

If you are looking for an easy, delicious main dish that you can prepare in less than an hour, this Easy Cheesy Chicken Broccoli Rice Casserole may just be what you are looking for! I just happened to see it on Pinterest, but it was not put together in a casserole. Rather, it was cooked in one pot on the stove, with the cheese being melted from a lid being placed on the skillet at the end of the cooking time. But it so reminded me of our Broccoli Rice Casserole (but easier and with chicken!), I changed the recipe a little so I could BAKE it!!! Baking it allowed me to sit down for 15 minutes:)

Suggestion for Sharing Life:

Make two of these casseroles. Take one to someone who is recovering from an illness, or an elderly person who is no longer able to cook for himself/ herself. Remember: The Bible says that we are to take care of the widows and orphans:) Having a 93-year old mother, I can tell you that she is THRILLED when different family members bring her food. Although she can cook, it is increasingly hard on her to do it without help.

Making the Cheesy Chicken Broccoli Rice Casserole . . .

This Cheesy Chicken Broccoli Rice Casserole is easy to make, especially if you have chicken breast meat already cooked. (I try to keep cooked chicken breast chunks in my freezer in 2-4 cup amounts.) Once all the ingredients are in the pot, its just a matter of waiting to eat!

I did change the original recipe to make it more like what we would like:

  • The original recipe called for the raw chicken chunks to be cooked in with the onion. I used my cooked chicken to save time.
  • The rice in the original recipe was sautéed for a few minutes before adding the chicken broth. I skipped that step and added the rice and chicken broth at the same time.
  • In the original recipe, the cheese was sprinkled on top, then a lid placed on the skillet until the cheese melted. I placed mine in a casserole, then baked it in the oven until the cheese melted.This way, the top of the casserole was browned a bit.

Easy Peasy Cheesy! 20 minute prep, 20 minute baking, and you are done!

Step 1: Cooking the ingredients, except cheese.

All the ingredients are cooked in the skillet–in varying steps–except the cheese. Some of the cheese is added just before pouring the ingredients into the casserole.

Step 2: Baking!

The last step is to sprinkle the remaining cheese on top and bake the casserole.

Then it’s “Chow Time”! Lynn and I both loved this casserole! In fact, we ate every morsel! It took us eating leftovers (because there’s just the two of us), but not a crumb was thrown away. It is a wonderful easy casserole to make for your family or company!

Easy Cheesy Chicken Broccoli Rice Casserole Recipe

This Easy Cheesy Chicken Broccoli Rice Casserole is perfect for when you don’t have much time to cook. All the ingredients are cooked in a skillet, then baked 20 minutes in the oven. From stove to table in less than one hour!


  1. Preheat oven to 350 degrees. Spray a 2-quart baking dish with nonstick cooking spray. Set aside.

  2. In a large skillet, sauce chopped onion in olive oil over medium heat.

  3. Add the minced garlic to the onions. Cook stirring about 1 minute.

  4. Once the onion is soft and translucent, add the cooked chicken chunks.

  5. Add the uncooked rice and chicken broth. Stir to combine. Cover and reduce heat to simmer for 15 minutes.

  6. At the end of the 15 minutes, add the broccoli. Stir, then cover and cook an additional 5 minutes.

  7. At the end of the 5 minutes, remove lid to see if all the liquid has been absorbed and the broccoli and rice tender. If not, cover and cook 2-3 minutes longer.

  8. Add 1 1/2 cups of the cheese to the chicken broccoli rice mixture. Stir well.

  9. Pour into the prepared 2-quart casserole dish. Sprinkle with remaining 1 cup of cheese.

  10. Place the casserole in the oven and bake 15-20 minutes, or just until the cheese has melted and is slightly browned.
