Cinnamon Crunch Banana Bread, a yummy quick bread!

Banana Bread for Lynn . . .

Lynn asked me to make him some Banana Bread this week. He had bought some bananas a few days earlier and wanted me to make something with them, before they got too ripe. I often use these opportunities to find NEW recipes, so I decided to look for a different one for this banana bread. In my search I found this Cinnamon Crunch Banana Bread on The pictures looked really good, and the cinnamon-sugar topping was definitely different.

Making the Cinnamon Crunch Banana Bread . . .

This Cinnamon Crunch Banana Bread uses whole wheat flour. That’s a first for me . . . at least with banana bread. I did make a few changes:

  • Because I didn’t have any Greek yogurt, and didn’t want to go to the grocery store, I substituted buttermilk for that ingredient. It was fine.
  • The instructions say to whisk the ingredients together, not using a mixer. I used my stand mixer, just being careful to not over-mix.
  • The oven temperature was 360 degrees. While I could have set mine to 360 degrees, many can’t do this, so I chose to bake mine at the typical 350 degrees.

The bread baked beautifully. We loved it. Because of the whole wheat flour, the texture was denser, but it was still a really good banana bread.

I took some of the Cinnamon Crunch Banana Bread to Candace’s shop for the girls. Victoria LOVED IT!!! She took some of it home for her breakfast the next day.

And, she told me today, “Maribeth, you know what I want for my birthday?”

I said, “No, what?”

She continued, “A loaf of that Cinnamon Crunch Banana Bread!!!”

LOL! That’s an EASY birthday present:) Mission Accomplished! It was a really good, delicious, and DIFFERENT Banana Bread!

Cinnamon Crunch Banana Bread Recipe

This Cinnamon Crunch Banana Bread is delicious and different! The cinnamon-sugar topping puts it over the top. The topping reminds you of cinnamon toast!


Bread Ingredients:

  • 2
  • 1
    mashed bananas
    (about 3 medium)
  • 3/4
  • 1/3
  • 1/2
  • 1 3/4
    whole wheat flour
  • 1/4
  • 2
  • 1 1/2
    baking powder
  • 1/4

Cinnamon-Sugar Topping Ingredients:

  • 1/2
    all-purpose flour (or whole wheat)
  • 1/2
    brown sugar
  • 1
  • 1/4
    butter (1/2 stick), cut in pieces


  1. Preheat oven to 350 degrees. Prepare a 9×5-inch loaf pan by spraying with non-stick cooking spray, then placing parchment paper down the long sides and middle. Tuck about 1-inch of the parchment paper down on the two long sides so you can use them to lift the bread out when done.

  2. Place eggs, bananas, sugar oil and buttermilk in a mixing bowl. Mix on MEDIUM speed just until combined.

  3. Add whole wheat flour, cornstarch the 2 teaspoons cinnamon, baking powder and salt to the egg mixture. Mix on LOW speed just until combined.

  4. Place the topping ingredients–except butter– in a bowl. Mix with a fork until combined.

  5. Add the chunks of butter to the topping ingredients. Mix in with a pastry blender, or your hands, until the mixture resembles crumbs.

  6. Pour the banana bread batter into the prepared loaf pan.

  7. Sprinkle the Cinnamon-Sugar Topping evenly over the top of the batter.

  8. Bake 55-60 minutes or until a toothpick inserted near the center of the bread comes out clean.

  9. Remove from oven and leave in the pan 5 minutes.

  10. Lift the bread out of the loaf pan by the tucked parchment paper ends.

  11. Place on a wire rack to cool. Cool completely before storing in an air-tight container.

Recipe Notes

This bread can be cut after 20-30 minutes, while still warm. Just be sure it is cooled completely before you wrap it or place it in an air-tight container to store.
