IT'S FALL YA'LL! (I'm so sorry, I just needed to say it)
Okay so two words: pumpkin, cookie-dough. Alright maybe that’s three words. But hey I don’t care because I made pumpkin spice cookie dough bites!! I’ve eaten things like this before, but I’m pumped because they’re 100% sugar free. I’ve dealt with a pretty shitty sugar addiction for well…my whole life. I can’t eat just one peanut butter cup, one bowl of ice cream, or one piece of cake. Sugar is essentially edible crack and once I have a taste, it’s on the brain 24/7. So these are a great treat that will leave you satisfied in one bite! (or two)
Instead of using sugar, maple, honey or coconut sugar I used Vega Sport Performance Protein and Lily’s Premium Baking Chocolate. The Vega Sport protein is grain free, nut free, low carb and plenty sweet thanks to stevia. Stevia is one of my favorite sugar-free sweeteners, as it originates from the stevia herb. It doesn’t affect blood sugar levels and personally, doesn’t leave me feening for more. The chocolate coating uses Lily’s, which is also sweetened with stevia and erythritol. Erythritol is a sugar alcohol that occurs naturally in many plants. As with stevia, it provides sweetness with out the blood sugar spike and intense cravings.

Ok back to the balls. Probably the easiest dessert I’ve ever made. The process goes like this: mix, roll, freeze, dip, freeze. Easy as pumpkin pie. Simply combine all the ingredients, roll them into bite size balls, freeze ‘em and dip in chocolate. They’re full of healthy fats from tahini, coconut oil and chocolate. Also, I used protein powder!! Can you say gainz? Enjoy these little suckers, they won’t last long in my house.
