I'm ONE week into my ketogenic journey and I've already learned a HUGE thing about myself. Macros aren't my thing. Womp. They're just not! I made it a goal for myself to eat a specific amount of carbs, protein and fat a day....but it's just not cutting it. Sure, the first week I lost a couple pounds. But, I pretty much went crazy. I had no flexibility and felt restricted to only certain foods. When I'm not counting macros I feel much more free and actually don't think about food as often. ALSO, I wouldn't have come up with this fiiiire Seafood and Sausage Stew! Cause in all honesty, probably didn't fit my macros at all.
Ahh so I digress. Life isn't about numbers, man. It's about freakin' stew. You're gonna love this one, I made it up on a whim! I knew I wanted to use this new marinara sauce I bought for a stew, but didn't know what else to put in it. I had no meat defrosted, and nothing but 1/4 head of cauliflower, onion and celery. Seafood stew it is! Then I dug through the meat drawer in the fridge (doesn't everyone have one of those??) and found sausage. HECK YA. Seafood and Sausage Stew was born! And it was perfect on the first try!
Let me give you a quick rundown on a couple ingredients. First, why cauliflower? Once it becomes soft in the broth, you puree it with the veggie mix to make a thick, luscious soup base. Mmmm. As for the seafood. You can use anything you like. I picked up the frozen seafood blend from Trader Joe's and threw the whole thing in the pot. No need to defrost.
