Apple Waldorf Salad for Fall!

Apples, apples and more apples . . .

I had bought over a dozen Granny Smith and Red Delicious apples, planning, of course to make some of my favorite apple recipes. So, when I planned the “Girls Only Luncheon”, I thought about making an Apple Waldorf Salad as one of the dishes. It is delicious, and it uses apples, so I knew it would fit in the “apple” theme for my luncheon.

Once again, I looked to my “Katy’s Korner” cookbook from the 1980″s, (I know y’all . . . that’s a long time ago!), because I remembered a recipe being in it for a Waldorf Salad. I found it, and made this wonderful apple salad. It was SO good . . . full of fresh apples, chopped nuts, celery, and added dried cranberries. We loved it, and so did my picky husband, Lynn!

Making the Apple Waldorf Salad . . .

Katy’s recipe just called for apples in the ingredients . . . it did not specify which to use. So, because I had both Granny Smith and Red Delicious, I used both. I did peel the apples because Mama (age 93) said she could not eat the salad if the peeling was left on the apples. It really didn’t matter, except the peeling would have added more color. However, the taste was still wonderful!

The hardest part of this salad is, of course, the prep work required:

  • Peeling and chopping the apples
  • Chopping the celery
  • Chopping the pecans
  • Slicing the grapes

But once all the chopping is done, putting the salad together is easy. You simply place all the ingredients in a  bowl, then drizzle with the dressing, and toss. Done!

I did make a few simple changes:

  • Dried cranberries, instead of raisins, because we prefer the dried cranberries
  • Two kinds of apples, peeled because of Mama
  • Added 1 1/2 cups halved red grapes

Then it’s time to sit down to a wonderful side of this favorite fall Apple Waldorf Salad! It truly is a beautiful and delicious salad loaded with fresh fruit and other healthy ingredients. And, even though it is an “oldie”, you will not go wrong with this salad. It works well as a side dish, a salad, or a light fruit dessert (my suggestion). If you want to use it as a dessert, substitute whipping cream for the mayonnaise in the dressing (Katy’s suggestion). Anyway, it’s a Family Favorite fall salad in our family!

Apple Waldorf Salad

This Apple Waldorf Salad, though an “oldie”, is always a favorite for fall. It is full of fresh fruit, nuts, and other healthy ingredients. Sure to please even picky eaters!

Ingredients

Salad Ingredients:

  • 3
    cups
    chopped apples
    (I used a combination of Granny Smith and Red Delicious)
  • 1 1/2
    cups
    chopped celery
  • 1 1/2
    cups
    red grapes, halved
  • 3/4
    cup
    dried cranberries
  • 3/4
    cup
    chopped pecans

Dressing Ingredients:

  • 3/4
    cup
    mayonnaise
    (or whipped cream)
  • 3
    tablespoons
    sugar
  • 1 1/2
    tablespoon
    lemon juice

Instructions

  1. Mix the chopped apples, celery, dried cranberries and pecans together in a large bowl. Toss gently to combine.

  2. In a separate bowl, mix the Dressing Ingredients together. (I used a whisk.)

  3. Pour the Dressing onto the Salad Ingredients. Toss gently to combine until the fruit mixture is covered with dressing.

  4. Cover and place in the refrigerator until serving time.

Recipe Notes

I drizzled lemon juice over the chopped apples to keep them from turning brown. Though lemon juice is listed in the Dressing Ingredients, I thought drizzling the apples would help.
