A Simple Menu Plan {for a not so simple time}

These are crazy days we are living in. I keep hearing the word unprecedented. People are working from home or not able to work at all. Schools are closed. Churches are meeting via Zoom and Facebook Live. The zoo is closed. The mall is closed. There are no sports. But with all of this, do you know what’s not canceled? Eating. (And laundry, but that’s a post for another day. )

Seriously, is anyone running their dishwasher twice a day like me? We eat at home the majority of the time on the regular, but three meals a day, plus snacks (oh, the snacks!), 7 days a week and my kitchen has never had more business.

In an effort to help with this kitchen business I thought I would offer some suggestions for some very simple meals to keep you going. I just wish I could come help you with your dishes…and by help with the dishes I mean I will send our boys. They are experts. Please just maintain 6 feet of distance. Please.

Breakfast Ideas:

I really like to make a few things for each week and then everyone can help themselves, but you could always make something each day…or you could eat cereal or poptarts or a fried egg or nothing. Just whatever floats your breakfast boat.

Dinner Ideas:

We are adding in as many fruits and veggies as we can. The more color to the vegetable or fruit, the better.

Another idea for dinner is to cook a turkey breast or a pork shoulder and eat it for several meals. Eat the meat with vegetables, make quesadillas, make sandwiches or make sliders. Sometimes if we just get tired of eating it I’ll freeze the rest and pull it out later.
