A Simple Menu Plan {for a not so simple time}

Here’s to having some fresh ideas and a menu plan. Hopefully you can grab a few ideas off this list.

Breakfast Ideas:

Continuing the theme of being able to fix something that my people can just grab on their own and heat up, I give you three great options. Of course, sometimes we just have eggs or pancakes or a smoothie.

Supper Ideas:

Slow Cooker Chicken, Sausage and Shrimp Gumbo by The Spruce Eats, French bread, sliced oranges

This gumbo is so good. When we vacation on the coast we buy fresh shrimp and let this gumbo cook while we are splashing in the waves and soaking up the sun. There’s something about making it at home that makes you feel like you are on a mini vacation when you eat it.

These chicken nuggets are SO good. As an added bonus, the growing boys in our family could eat more than the normal serving size at the actual restaurant…instead of eating my food. Winning all the way around.

Mediterranean Herb Atlantic Salmon (from Aldi), Southern Cheese Grits by House of Yum, Turnip Greens, Lima Beans

This salmon is so good and so simple. You just stick it in the oven and it’s ready in 20 minutes. The combination of cheese grits and turnip greens comes from one of our favorite restaurants while vacationing at the beach. Perhaps I’m just missing the beach?!?

Grilled Teriyaki Chicken by Jamie Cooks It Up, Corn Salad, Grilled Asparagus, Rice

Grilled chicken and corn salad makes me think of summer. Summer makes me smile. The end.

Sliced Steak (prepared like this steak) for Street Tacos, Homemade Corn Tortillas by Mexico in my Kitchen, Guacamole Salad

Our oldest son has been requesting street tacos with homemade corn tortillas. We’ve never had time to attempt this. Guess what?? We do now.

Chicken Spaghetti by Thriving Home Blog, Southern Green Beans, Ambrosia Salad by Taste of Home

Chicken Spaghetti is a favorite around here. I love the combination of the savory of the chicken spaghetti and the sweet of the fruit salad. I also love that a dish with marshmellows can be called a salad.

Easy Calzones by The Pioneer Woman, Tossed Salad, leftover Ambrosia Salad by Taste of Home

Calzones remind me of pizza and I love pizza. In fact, all 5 of us love pizza, but making calzones allows us to personalize each one. Everyone is happy.

Fun Ideas:

Honestly, I tried on my jeans the other day for a little accountability so “fun ideas” for me may include eating raw carrots and celery and drinking water. I kid…I will definitely make homemade pudding. Why? I really don’t know. It just seems like the right thing to do right now.

Leave the cocoa out if you want vanilla pudding. Add peanut butter is you want peanut butter pudding and something that tastes like a delicious, creamy, hot peanut butter cookie.

Does anyone else crave lemon things in the spring? I don’t know what it is, but lemon tastes so good right now. And I always, always love a scone.

Honey Whole Wheat Bagels by Heavenly Homemakers

There’s something about rising dough and kneading dough that is very calming to me. Maybe it will be for you as well?!?
